Daniel Mertl to head up the kitchen at Lunar Pub Company's Ganymede

Former Chez Bruce and The Glasshouse chef Daniel Mertl will oversee the stoves at the soon-to-launch Ganymede in Belgravia, the second London opening for the Lunar Pub Company.

Set to launch early next month, Ganymede will be located on Ebury Street on the site that was once home to The Ebury Wine Bar, and feature both a 30-cover bar and 55-cover dining room.

Trading seven days-a-week for lunch and dinner, Ganymede will offer 'refined and innovative British food', with Mertl creating the menu in partnership with Lunar Pub Company's chef director Oliver Marlowe.

Dishes set to be served in the dining room include crab and basil raviolo, leek fondue and creamed bisque; quail and foie gras wellington with creamed potatoes and roast shallot; Cornish hake with white bean puree, roast salsify and burnt lemon and caper dressing; and for dessert, a white chocolate crème brûlée with blueberry compote.

A blackboard will also champion a range of premium meat cuts and feature daily-changing specials.

The contemporary interior will feature 'sleek tiling and uniformed panelling', offset by exposed brick walls and timber wood flooring.

“To reflect the Belgravia location, we’ve introduced an elegance to the interiors, and this is something head chef Dan Mertl has also channelled into his menu too," says Marlowe, who founded Lunar Pub Company with former Fulham Mitre general manager Hubert Beatson-Hird.

"Having had the pleasure of previously working with Dan at The Glasshouse in Kew, I know how talented he is and I’m excited to showcase the elevated culinary creations we have designed for Ganymede.”

Ganymede is named after a Trojan aristocrat in Greek mythology who was kidnapped by Zeus and taken to the top of Mount Olympus to become the wine pourer to the Gods.

Lunar Pub Company opened its first venue, The Hunter’s Moon pub in South Kensington, in autumn last year.

“With life reopening and the appetite for unforgettable dining and drinking experiences greater than ever, Ganymede couldn’t be launching at a better time," says owner-director Beatson-Hird.

Mertl was most recently head chef at Noizé in Fitzrovia, and previously spent more than three years heading up the kitchen at The Glasshouse.

His CV also includes stints at heavy-hitting London restaurants including Chez Bruce and Le Gavroche.
