Slice by Pizza Pilgrims goes permanent in Finsbury Park

Pizza Pilgrims is to launch the first permanent site for its aptly named New York pizza-by-the-slice concept Slice next month in London's Finsbury Park.

The opening was first mooted back in March, the group having first established the concept as a pop up on London’s Southbank late last year

Co-founders Thom and James Elliot have constructed a menu that will 'stand apart' from the Pizza Pilgrims offering, taking inspiration from the slice joints and dive bars of New York City.

The 50-cover restaurant will feature a menu of pizzas served by the 12-inch slice or the metre, alongside a selection of sides and dippers.

Classic toppings such as the margherita, or Parma ham and pesto, will be available. New flavours exclusive to Slice, meanwhile, will include the 'Penne Alla Vodka' slice; and the revamped 'Hawaii Not' with honey-glazed pineapple, nduja and jalapenos.

Diners will also have a chance to challenge themselves with classic 80s arcade games such as Pac Man and Street Fighter, with high scores awarded with slices.

All staff at Slice are fully crossed-trained across every role in the pizzeria, both service and kitchen, to 'ensure the site has a totally fluid team where each individual has exposure to different areas of the business to develop their personal skillset and experience'. 

“We’re excited to finally set some roots and launch our first permanent site of Slice by Pizza Pilgrims," says James.

"Slice is the great love story between New York and Naples pizzerias and we felt this site in Finsbury Park is the perfect community driven spot for both locals and Londoners looking for a casual spot to enjoy a slice, grab a cold beer and have a bit of fun with friends in an NYC-inspired setting.”

Alongside the new opening, Slice by Pizza Pilgrims continues to operate its Southbank pop up, as well as a concession at Swingers West End.

In total, Pizza Pilgrims is looking to open four new pizzerias in the capital by the end of the summer, and has a further four in negotiations.

It is also planning to launch a dessert-focused concept majoring on sweet calzones called Calzonification at Kingly Court.
