Founded by friends Florian de Chezelles and James Dare (formerly of LVMH and Firmdale respectively), The Salad Project is described as an 'all-day-dining eatery' that features a central salad bar featuring more than 50 ingredients.
The 1,800sq ft space in Spitalfields, which was designed by YourStudio, can seat up to 25 people on tables and stadium-style seating inside, with a further 12 seats available outside.
Chef and nutritionist Clementine Haxby has helped design The Salad Project's menu, which offers a range of customisable salad options, as well as soups and rice bowls.
All the ingredients at The Salad Project have been sustainably sourced from either The Eden in the City vertical farming project in Dundee, or supplier and retailer Natoora.

"We firmly believe that this country needs better access to healthy fast food at a price that won’t break the bank, which is exactly what we have created at Salad Project”.
With the first site now open, de Chezelles and Dare are planning to expand the concept across the UK.
