Mathew Sherry named head chef at The Balmoral’s Number One fine-dining restaurant
The Edinburgh-born chef joins the Rocco Forte hotel from his role as head chef at Michelin-starred Northcote in Lancashire, where he worked closely with executive chef Lisa Goodwin-Allen.
Sherry’s CV also includes working with chef-patron Dominic Jack at Castle Terrace in Edinburghwhere he worked for seven years when it held a Michelin star.
He has developed a new three-course menu and seven-course seasonal menu at the Michelin-starred hotel restaurant, described as ‘using classical flavours and modern techniques’.
“I am honoured to return to my home city to head up the kitchen at such an iconic restaurant and work with the many seasoned professionals already here at The Balmoral,” he says.
“The detail on each dish has been carefully designed, from sourcing seasonal ingredients to the way they are displayed and plated, everything has been thoughtfully considered.”
Number One opened in 1997 and was first awarded a Michelin star in 2003.
