The 20-cover Old Street restaurant and takeaway is next door to a more traditionally-run kebab house - The Best Kebab - and will be open until 5am.
The menu will include the Pepperoni Pork Shawarma, a fusion of pork shawarma and pepperoni pizza involving soppressata, tomato pork jus, mozzarella fondue, basil and parsley.
A Le Bab Dirty Vegan Kebab will also be available, made with Beyond Meat, house pickled cucumber, sweet chilli relish, crispy fries, vegan mayo, sumac, vegan fondue sauce and cress.
Le Bab’s modern classic kebabs, cooked on a wood and charcoal-filled robata, and served with freshly-made in-house flatbreads will also feature on the menu, including a lamb ‘madras’ adana kebab, which is inspired by Indian flavours.
Other dishes include Meat Butter Naan (reduced beef jus, British sea salt butter and garlic, spread over home-baked naan and topped with Syrian za’atar); and Turkish-Korean fried chicken with a date, chilli and soy glaze and garlic mayonnaise.
The drinks list will be concise and focused on craft beers and gin and tonic.
First revealed late last year, the venue will feature a mix of bar and banquette seating and play a UK hip-hop-centred playlist created by co-founder Stephen Tozer and grime artist Big Zuu.
Billed as stylish, colourful and daring, the interior has been created by Buchanan Studio, and will be made up of a striking stainless-steel counter and side bar, hot pink leather stools and banquette, a stainless steel and mirror panelled wall design and a graffitied ceiling with neon lights.
“Everyone is so so ready for the big releases in May & June. It’s going to be a special summer, with a lot of late, late nights," says Tozer.
"We’ve always wanted a night time restaurant presence; it obviously makes sense for kebabs, but also London is a little short of small hours eating out options. We can’t wait to be there for everyone, in the mix, all day, almost all night, feeding the post lockdown renaissance.”
Le Bab was founded in 2016 by Tozer, Ed Brunet and chef Manu Canales in Soho’s Kingly Court.
The trio opened Maison Bab in Covent Garden in 2018, where they also run tasting menu-only counter restaurant Kebab Queen.
Earlier this year it was reported that Le Bab had joined forces with Kraft Brewery to oversee the food at the upcoming Kraft Dalston, which is also set to launch later this month.
