Paul Croasdale takes the reins at The One & Only Flitch of Bacon

The former head chef of Alyn Williams at the Westbury has joined The One & Only Flitch of Bacon as chef patron following the departure of Tim Allen and the subsequent loss of the Essex pub's Michelin star.

Paul Croasdale - whose cooking CV also includes The Devonshire Arms in the Yorkshire Dales under Michael Wignall and the Atlantic Hotel in Jersey under Mark Jordan - is hoping to regain what was Essex's only star.  

He plans to ‘respect the heritage and story’ of the countryside venue showcasing ‘foraged foods, local meats, sustainable seafood, with simplistic intervention to produce clean flavours and exciting tasting menus’.

When the venue is allowed to reopen it will offer a calendar of events that includes game evenings, foraging events and supplier collaborations.

The Little Dunmow pub - then called simply The Flitch of Bacon - was taken over and extensively renovated by Midsummer House chef Daniel Clifford in 2015. 

In 2018 Clifford appointed Allen as chef patron and the venue was renamed Tim Allen’s Flitch of Bacon. 

Under Allen’s stewardship, the pub won a star in 2019 and retained it in Michelin’s 2020 guide.
