Contemporary Japanese restaurant Bisushima plans Winter opening

Modern Japanese restaurant Bisushima is to launch later this year on the sixth floor of the newly refurbished Page8 hotel in London's Covent Garden.

The 6,000sq ft space will be able to accommodate around 190 covers in total, and boast a separate bar area and two large roof terraces, one of which will directly overlook Trafalgar Square.

Bisushima is the creation of The Markets Group MD Sergey Men, and his business partner Ruslan Ugarov.

Having previously worked as a sushi chef in restaurants including Sumosan, Men has developed a 'signature style' that Bisushima will epitomise, placing 'an emphasis on harmony between the guests, environment and the food'.

Example dishes include toro tataki with quinoa and pak choi salad; shime saba oshizushi (seared cured mackerel pressed sushi with ginger, shiso and sesame); unagi shirayaki with porcini mushrooms and miso infused spinach puree; and hojicha crème brulee with blackcurrant ice cream.

“Bisushima has been a dream of mine for many years so I’m delighted to finally bring the idea to life," says Men.

"I want the restaurant to be a transitional space, with the whole experience depending on the time of day you visit. For example, in the morning we will be serving the only Japanese breakfast in London. It will be truly authentic, healthy and balanced with a huge amount of natural light and calming atmosphere.  

“Then throughout the day it will be informal and laid back, a place of comfort and sanctuary away from the hustle and bustle of London on the streets below.

"Moving into the evening, things shift gear. A big part of Japanese culture is entertaining and drinking in the evenings, an energy of endless possibilities.

"Overlooking the lights of London, Bisushima will be the place to be for delicious, authentic sushi and modern dishes with Japanese essence, accompanied by interesting wines, sake and cocktails.

"The evening is when the restaurant will truly be alive and humming with excitement.”
