Frog by Adam Handling launches al fresco zero waste offshoot

Chef Adam Handling has launched an al fresco, zero waste offshoot operating on the pavement in front of his recently reopened flagship Frog restaurant in London's Covent Garden.

Called Toad on the Road, the concept is similar to that established by Handling at his now permanently closed Ugly Butterfly restaurant in Chelsea. 

Festooned in floral decorations created by McQueen, the outdoor space will hold 36 covers and serve a range of dishes that have been created using waste ingredients from the preparation of the Frog by Adam Handling tasting menu.

They include lobster rolls made using offcuts from Handling's signature lobster in wagyu fat dish; 'Nanny Sophie’s fried chicken', which use the thigh meat not needed for the restaurant’s chicken main course; and fish finger sandwiches made from turbot trim.

Failed pomme soufflés from the kitchen will also feature, served with caviar and all the trimmings.

The dessert menu, meanwhile, will include frozen ice cream sandwiches made with foraged ingredients from in and around Hackney including meadowsweet, which is used in one of the Frog by Adam Handling parfait dishes. 

Drinks will be primarily be provided by Handling's Eve Bar, located next door to the Frog on Covent Garden's Southampton Street, and will include coffee negroni cocktail that uses coffee grounds seeped in gin, left over from the Nespresso coffee pods served in the restaurant.

There will also be a special menu of frozen drinks available at Toad on the Road, which have been launched in time for Covent Garden’s ‘Cool Down’ event that is running between 27 and 31 August.

Handling announced back in March that both Ugly Butterfly and The Frog Hoxton would remain closed indefinitely as a result of the Coronavirus pandemic.

However, the chef's other two restaurants - Frog by Adam Handling and Adam Handling Chelsea - have now reopened following the easing of Coronavirus lockdown measures.
