Mac & Wild founders to launch 'largest single F&B site in Scotland' - updated

Mac & Wild founders Andy Waugh and Calum Mackinnon are to launch an artisanal food hall concept within the Edinburgh St James development.

Described as being 'the largest single F&B site in Scotland', the 16,600sq ft Bonnie & Wild food hall will be designed 'to demonstrate the very best of Scottish produce and hospitality' and is being promoted as the first concept of its kind to open in Edinburgh. 

Eight different restaurant brands, including Mac & Wild, will operate stalls within the space, alongside a retail offering that will feature local artisanal butchers, fishmongers, grocers, cheesemongers, chocolatiers, and bakeries. 

There will also be three 'unique' bar concepts serving an array of alcoholic and non-alcoholic craft Scottish products; and a 'virtual shooting range', where guests will be able to experience Highland stalking.

The food hall’s mix of traders will 'aim to address the needs of the local population, with an offering that has a global appeal'.

"We love the fact that it is rooted in its community but has a global outlook.

"Our vision is to bring the best of Scottish produce to the local community as well as visitors from further afield, and we are so excited to create a platform for some of Scotland’s most interesting traders.

Update (2 February 2022) - despite early involvement, Calum McKinnon and Andy Waugh subsequently left Bonnie & Wild and are no longer involved in the business.
