Speaking on BigHospiality's latest United We Stand podcast, the former Pidgin chef says she hopes to resume selling hot food soon at Mei Mei, which opened last year.
"The policy at Borough Market at the moment is come, shop, leave rather than come, eat and linger. We've turned Mei Mei into a giant production kitchen."
"We did quick online poll and the consensus was that people wanted things they could dip in and out of."
With all her team on furlough Haigh is running the entire operation by herself but hopes to take some staff off furlough when Mei Mei starts offering hot food again.
Hot food is expected to be offered via courier only initially but Haigh is hoping that she'll be able to serve customers directly soon.
Despite being a bit starved of social interaction, Haigh says she is happy to be back at work.
"I can't sit still. Being back at work was eerie to start off with but it's getting a lot busier now. Borough Market has all the right measures in place and we're about to get perspex screen installed at Mei Mei to protect staff and customers."
