She will oversee the entire food and chef operations at the 237-bedroom hotel, which is currently set to open within the One Bishopsgate Plaza building in the City later this year (although, given the ongoing Coronavirus crisis, this may be subject to change).
With a career spanning nearly 30 years, Sinclair, who was born in the UK, has worked in kitchens across the globe including in Europe, Asia, and the Middle East.
Most recently she spent four years as the director of culinary operations at the Sheraton Saigon Hotel & Towers in Vietnam.
In total she has held eight executive chef positions including at the Langham Hong Kong; the Fairmont Dubai; and the Grand Tarabya in Istanbul.
Discussing her new position, Sinclair says: ”I look forward to bringing the elegance of natural flavours respected in Asian cuisines to Pan Pacific London and growing our knowledge of respecting our environment through educating the team on sustainability.”
The eventual opening of Pan Pacific London will mark the European debut for the Singapore-based Pan Pacific Hotels Group.
The group currently owns and/or manages nearly 50 hotels, resorts and serviced suites in 29 cities across Asia, Oceania, North America, and Europe.
