It is relaunching as a more ‘refined’ barbecue concept, named Red Dog Soho, offering dishes such as Nashville-style fried oysters; fried catfish with tartare sauce; and the ‘10 Year Burger’ with marrow butter glaze and pancetta.
As well as craft stouts, IPAs and lagers from the US, there’ll be a selection of whiskies served straight, as sours or a shot alongside beer. Guests can also buy a ½ bottle of whisky for their table, starting from £36.
Red Dog Saloon specialises in ‘old-school Austin BBQ’ and was founded by Tom Brooke in Hoxton in 2011.
It currently trades from two London restaurants and three in Nottingham, Southampton and Liverpool. The Soho restaurant opened in 2015.
In 2019 Brooke launched Nashville-inspired chicken restaurant Louie’s beneath Red Dog Saloon Hoxton and Indian ‘street food’ concept Burra Khana witihin Red Dog Saloon Nottingham.
Speaking to BigHospitality last year he said that in his view successful restaurant groups were now likely to be those operating more than one concept, such as JKS Restaurants, rather than cookie-cutter chains.
