Peter Avis to replace Fred Sirieix at Galvin at Windows
Peter Avis is to replace Fred Sirieix as general manager at the Galvin at Windows restaurant in the London Hilton on Park Lane.

Sirieix left his role in December after 14 years overseeing front of house.

Liverpool-born Avis has over 20 years’ experience in the industry, and previously worked with Virgin Group and the Babylon Restaurant and Bar at the Roof Gardens in Kensington.

He oversaw the culinary direction of Sir Richard Branson’s private islands Necker and Moskito in the British Virgin Islands and managed the launch of Mont Rochelle restaurant in Cape Town and Mahali Mzuri in Kenya.

“Taking Galvin at Windows into a new decade is an exciting new project and to welcome Peter Avis as the new general manager is perfect timing,” says Chris Galvin.

“Our plans for the future mean that we have worked hard to develop new dishes, service styles and our new bar 10°- while looking at making the restaurant more accessible.

“Peter comes from the perfect stable to suit Galvin at Windows.  He possesses gold hallmarks, which we look for in service and is totally customer focused. Such is his ability to hit the ground running, it already feels like we have worked together for many years.”

Galvin at Windows opened in 2006 and held a Michelin star for 13 years until the 2020 edition of the Michelin Guide Great Britain and Ireland.
