The group, which claims to offer 150 different dishes, currently runs 19 UK restaurants.
Property firm Savills has secured sites for the brand at the Liverpool One shopping centre, in Glasgow’s St Enoch Centre, as well as a further location in Dublin.
These are the first new openings for Cosmo in two years. In 2018 the company closed two restaurants, in Coventry and York, blaming “well-documented pressures" and "tough trading conditions”.
“Cosmo is well and truly weathering the storm and we look forward to working with the brand as it embarks on its growth plans for this year,” says Carlene Hughes, leisure director at Savills.
The group attempted to go more high-end in 2017 by relaunching its Leeds site as the first Cosmo Luxe with ‘gourmet’ dishes, but the restaurant is listed online as 'temporarily closed'.
