Graham takes on the new role at the Michelin-starred restaurant next month as part of the recent shuffle that saw former Bohemia chef Steve Smith named as the new head chef of The Latymer at Pennyhill Park hotel in Surrey following Matt Worswick’s move from PennyHill park to Shanghai.
Graham’s CV includes stints at The Lanesborough hotel in London and at Michelin-starred Auberge du Lion d’Or in Geneva, and the then Michelin-starred Le Celadon in Paris, before moving to Bohemia. He was part of the team at Bohemia that was awarded the first ever five AA Rosette rating in the Channel Islands.
His cooking will be influenced by his time spend working in Paris and Geneva and will combine local Jersey produce and seafood with that of France, which is located just 14 miles away from the Channel Island.
“We are thrilled Callum will be taking over as head chef at Bohemia,” says Lawrence Huggler, owner of Bohemia and The Club Hotel & Spa. “I have known Callum for a number of years and, having spoken with him at length and sampled the new dishes and menus he is planning. I am very excited for the next chapter of Bohemia.”
Graham will begin in his new role on 10 February with Bohemia Bar also being relaunched as The Club Bar on the same date.
“I’m really pleased to be taking over at Bohemia and am looking forward to introducing my new menus and style,” he says. “I hope to continue to surprise and delight Bohemia customers over the coming years.”
