Loughton-based wing specialist Wing Shack is making a move into the capital with the opening of a pop-up in London early next month.

The restaurant group, which counts British rapper Big Narstie and British Olympic boxer Lawrence Okolie among its regular visitors, will open a 30-cover restaurant in Clerkenwell at the start of February.

It will serve the same menu as the Loughton original, which features dishes including boneless chicken fillets, burgers, wraps and wings that come in a range of flavours, such as jerk, BBQ, Changs honey and sesame and Jarvis tangy buffalo.

It will also offer vegetarian options such as the Edgy Veggie burger with charred halloumi, soy marinated mushroom, tomato relish and hummus.

Wing Shack was founded in 2017 and opened its debut restaurant in Loughton, in Essex, the following year.

The group is one of a number of players looking to grow the wing category in London. At the end of last year US-based brand Wingstop announced it was to open a third restaurant, at Bluewater Kent. The brand, which is operated by London-based Lemon Pepper Holdings under a franchise deal, is looking to grow significantly in the UK in the next few years.

Thunderbird fried chicken, which also specialises in wings and which is backed by TriSpan, now runs four London restaurants since its launch in 2015.
