Chefs Jonathan MacDonald and Daniel Spurr will launch Ka Pao in the Botanic Gardens Garage in January 2020.
The restaurant will seat 120 covers, with a menu influenced by South East Asian cuisine.
MacDonald has lived and worked in the region, and several chefs from the restaurant have worked stages in Thailand ahead of Ka Pao’s opening.
"Ka Pao is not about trying to be authentic or replicating the food of any particular region or country,” says Spurr.
“The guiding principle will be more about taking inspiration from dishes, ingredients and flavour combinations that we have encountered, that have influenced us and combining them with our own local produce.”
Ox and Finch opened in 2014 and has held a Bib Gourmand, which recognises restaurants of quality and value, since 2015. It was ranked 84th in Restaurant magazine’s top 100 restaurants in the UK the same year.
The team launched Middle Eastern-inspired restaurant Baba in Edinburgh in 2017, and it is also recommended in the Michelin Guide Great Britain and Ireland 2020.
Twelve senior chef and management roles at Ox and Finch and Ka Pao have been filled via promotions from within the business
