Andrew Sheridan swaps Stargazy Inn for Craft Dining Rooms
He will also oversee the kitchen at the Craft English Garden - part of a collaboration between Craft Dining Rooms owners Sam and Emma Morgan and Opheem chef director Aktar Islam - when it opens next year.
Sheridan, who represented Wales on BBC’s Great British Menu both this year and last, had been overseeing the kitchen at The Stargazy Inn in Port Isaac, Cornwall, having joined the restaurant in April.
No reason has been given for his sudden departure, but BigHospitality has reached out to both Sheridan and The Stargazy Inn for comment.
Sheridan’s Craft Dining Rooms and English Garden menus will focus on British produce, and include confit salmon with a cucumber and butter sauce; a chowder of Plymouth cod, clams and mussels; and venison with beetroot and mushroom.
“Having met Sam, Emma and Aktar, I could see the passion they all had for traditional British dining,” says Sheridan on his new role.
“I believe together we can create and dining envision which creates a journey from the 1940s to 2020s.
“We want to ensure that the menu invokes childhood memories and excitement and whilst the offering will be considered high quality this doesn’t mean it’s not accessible, relaxed and open to all.”
Sheridan was previously executive chef at Sosban in Llanelli, Wales, which was named The Good Food Guide Readers’ Restaurant of the Year for Wales in 2013.
It closed in February after eight years with the team admitting to struggling with the rising costs of running the site.
