Yosma chef Hus Vedat and Fez Ozalgan to open Barboun in Shoreditch

Yosma chef Hus Vedat is opening a new restaurant with chef Fez Ozalgan in Shoreditch next month.

Barboun – which translates as red mullet in Turkish – is described as an Eastern Mediterranean grill inspired by the flavours of Levantine coastal towns.

It will focus on fish and vegetables cooked over open flames on robata and josper grills and will be open for breakfast, lunch and dinner serving a seasonally led menu with sustainability at its core.

In addition, the restaurant will have a deli element serving food on the go.

It will open in early December on Shoreditch’s Great Eastern Street.

Barboun will preview at this year’s Taste of London winter food festival, which opens today and runs until 24 November. Dishes on the Taste menu include cheese muhlama; mackerel borani; aubergine dolma; and short rib iskender.

Other dishes set to appear on the menu when the restaurant opens in Shoreditch will include sundried aubergine dolma stuffed with sour cherry, bulgar and garlic yoghurt; grilled wild sea bass with fermented yoghurt tarhana; and a tomahawk steak marinated in Anatolian spices to share.

Vedat headed up the opening of Yosma in Marylebone in June 2016 when it was launched by restaurateurs Levent Buyukugur and Sanjay Nandi, founders of the Good Food Society, but the restaurant has since been replaced with Playa Bar. It is set to be relocated, according to its website.
