Grover previously cooked at Le Caprice, Hix Soho, Scott’s Mayfair, and Soho House’s The Ned and plans to bring a fresh approach to Duck & Waffle’s sky-high dining room ‘while keeping the classics where they belong’.
His new seasonal dishes include a twice baked keens cheddar souffle with shaved winter truffles; hanger steak with roasted bone marrow, Hereford garden snails, garlic and parsley; and Jersey rock oysters.
Duck & Waffle opened on the 40th floor of the 110 Bishopsgate Building in 2012.
A fast-casual spin-off, Duck & Waffle Local, launched near Piccadilly Circus in 2017.
The group is owned by Orange Brands Management, which also operates the Sushisamba restaurants.
