The move would mark the next stage in an astonishing expansion drive that appears to show no sign of abating.
Six by Nico's concept revolves around a six-course tasting menu priced at £29 per person, which changes every six weeks and is themed around different places, memories and ideas.
Later this month Simeone will open his fourth restaurant of the year, this time in Liverpool.
It follows a period of growth that began earlier this year with Simeone opening his first restaurants outside of Scotland, in Belfast and Manchester respectively.
He further added to his tally last month with the launch of his second Glasgow location, which opened on the Southside space previously used by Simeone as a development kitchen.
Speaking to BigHospitality in August following the launch of the Manchester site, Simeone said that going forward he was keen to double down and further expand the Six by Nico concept.
“[It’s] my passion, and I have an incredible team supporting me so I am very keen to see how far I can take it,” he said
Born in Glasgow to Italian parents, Simeone, who previously cooked at the Michelin-starred Number One at Balmoral, launched his debut restaurant 111 by Nico in Glasgow in 2011.
Simeone also operates a Six by Nico restaurant in Edinburgh.
