Scottish-born chef Nico Simeone is continuing his prolific run of restaurant openings with the launch of his second Six by Nico site south of the border in Liverpool next month.

It will be the chef’s sixth iteration of his ‘ever-evolving’ Six dining concept that he established just two years ago, and the fourth to open this year.

As with Simeone's other Six by Nico sites, the restaurant will serve a six-course tasting menu priced at £29 per person that changes every six weeks and is themed around different places, memories and ideas.

Earlier this year Simeone – who launched the first Six by Nico in Finnieston, Glasgow, in 2017 – opened his first restaurants outside of Scotland in Belfast and Manchester respectively.

He further added to his restaurant tally earlier this month with the launch of his second Glasgow location, which opened on the Southside space previously used by Simeone as a development kitchen.

The 90-cover Liverpool restaurant will feature a dedicated wine and spirits bar, with Simeone saying the city was the obvious choice for him to open his next site thanks to its thriving food and drink scene.

“Since we opened in Manchester earlier this year we have had an overwhelming amount of support, with guests travelling from all over the North West to try each of our menus,” says Simeone.

“We couldn't be more delighted about bringing a completely new offering and dining experience to the people of Liverpool next."

Born in Glasgow to Italian parents, Simeone, who previously cooked at the Michelin-starred Number One at Balmoral, launched his debut restaurant 111 by Nico in Glasgow in 2011.

Simeone also operates Six by Nico restaurant in Edinburgh.
