The Gladwin brothers - Richard, Oliver and Gregory – have taken the Soho site once occupied by Anthony Demetre and Will Smith’s Arbutus as the location for their next restaurant.

Set to open next month, Sussex will be the first West End project for the brothers, who also operate The Shed in Notting Hill, Rabbit on the Kings Road, and Nutbourne in Battersea.

The restaurant will offer ‘an eclectic mix of classic and progressive cooking’, with many of the ingredients coming directly from the Gladwins’ West Sussex family farm.

The wine list, meanwhile, will feature the Gladwin family’s award-winning range of Sussex wines sourced from their Nutbourne vineyard in West Sussex.

Chef-patron Oliver Gladwin will oversee the kitchen, serving a menu that the restaurant says will combine the rustic and the refined.

Starters will include hand-dived scallops served with blood pudding, Jerusalem artichoke ‘mud and bark’ and lemon sour cream; while mains will feature pork tenderloin served with malted pig’s cheek, rainbow chard, lardo and broken hazelnut English miso.

Daily specials will also be a feature and include vinewood-roasted grouse; and Oliver’s ‘signature’ wellington range with pastry fillings such as venison, chard and black figs.

The Gladwin brothers opened The Shed in 2012, followed by Rabbit in 2014 and Nutbourne in 2016.
