Breddos and Belzan teams collaborate on Liverpool restaurant

The founders of London’s Breddos Tacos and the team behind Liverpool restaurants Belzan and Volpi are to launch a collaborative project.

Mexican taqueria Madre will join Liverpool's booming restaurant scene when it opens at the city's Royal Albert Dock in November .

It comes after the Breddos’ team, who have two London taco restaurants, ran a sold-out pop-up in Liverpool last year.

Madre, which means 'mother' in Spanish, will seat 100 covers across two floors with a bar area and large outside courtyard. The menu is inspired by the cuisine of Mexico City with lunch dishes set to include tacos filled with iberico pork al pastor; and beef short rib birria with black pudding mole.

Larger sharing plates will be on offer in the evening, including half a pig’s head chicharron; butterflied sea bass divorcioados; and hogget barbacoa.

The drinks list has been designed by the Belzan and Volpi team, with a range of margaritas, craft beers and natural wines.

“After years of trading in London we’re super excited to collaborate with some Liverpool legends and create something entirely new and exciting for the city,” says Breddos co-founder Nud Dudhia.

“Madre will be a place you can stop in for a bite, or stay all night listening to DJs, eating small plates and drinking cocktails with friends.”

Breddos is the second London restaurant group to open in Liverpool’s Royal Albert Dock after Rosa’s Thai Café made its regional debut at the scheme in February.
