Silo set to open in London in September
It follows a successful crowdfund by Crate earlier this year that raised £962,480 for a major refurbishment of the brewery’s Hackney Wick home.
Earlier this month McMaster closed Silo’s flagship restaurant in Brighton having operated there for five years.
Discussing the move, the Silo team wrote on the restaurant’s Facebook page back in February: “We have the opportunity to evolve and take Zero Waste to the next level; to demonstrate the system works even in one of the world's biggest cities.”
The new Silo will serve a continually changing evening menu of 10 to 15 dishes, including smoked violet carrots with egg yolks and elephant garlic; and Jerusalem artichokes cooked on fire with stilton sauce and pickles.
There will also be a brunch menu, which will be served on weekends from 10am and feature dishes such as Silo porridge, made with freshly rolled oats and home-made crème fraîche, topped with seasonal fruit; and coddled eggs served with kimchi, black pudding and freshly baked sourdough.
Silo opened in Brighton in 2014 and received national attention for its waste-free ethos, with plates made from plastic bags, tables from industrial floor tiles and work benches from filing cabinet frames.
