Former Bob Bob Ricard head chef George Farrugia takes over at Fenchurch restaurant Sky Garden
George Farrugia has been named head chef of the Fenchurch Restaurant at Sky Garden, on the 37th floor at London’s 20 Fenchurch Street.

He replaces former Great British Menu finalist Dan Fletcher, who announced he was leaving the role earlier this month to become head chef of Ben Crofton’s new 28 Market Place restaurant​ in Somerset.

Farrugia previously spent a number of years working closely with chef Eric Chavot, most recently as head chef at Leonid Shutov’s Bob Bob Ricard restaurant in Soho.

He will oversee a brigade of 16 at Fenchurch, which is run by catering company Rhubarb.

As well as maintaining the restaurant’s modern British menu, Farrugia will be tasked with creating new dishes that are expected to reflect his Mediterranean influences and passion for British produce.

Speaking of his appointment, Farrugia says he’s looking forward to putting his stamp on the Fenchurch menu.

“Following my Cypriot roots and classical training, my cooking style is heavily influenced by fresh Mediterranean flavours and French cooking techniques.

“I am extremely excited to be joining the rhubarb team and to be working at one of the City’s most iconic buildings.”

Sky Garden is spread over three storeys, with the Fenchurch Restaurant at the top, the Darwin Brasserie bar and kitchen, and City Garden bar on the 36th​ floor, and the Sky Pod bar on the 35th​.
