Positioning itself as a ‘luxury’ and ‘sophisticated’ brand, Heritage will feature table-top charcoal grills that allow diners to barbecue their own meats, seafood and seasonal vegetables.
Following on from the recent launch of Parrillan in Coal Drops Yard, Heritage will be the second restaurant opening in almost as many months to feature a table-top grill element.
Head chef Aarik Persaud, whose CV includes the Chewton Glen hotel in Hampshire and Hong Kong’s Butchers Club brand, will run the kitchen, while former Hakkasan sommelier Elena Serban has overseen the curation of the restaurant’s 200-strong wine list.
The menu features a selection of traditional Swiss dishes including fondue, which is served with either vegetables, meat or seafood.
Small plates of dry-aged steak tartare and lobster tart with roasted fennel will be served alongside sharing plates of rösti with maple-glazed Dingley Dell lardons; Tomette de Brebis and shaved truffles; and raclette served with Cobble Lane charcuterie that includes 24-month ham, wagyu bresaola and saucisson.
“We’re delighted to be opening in the heart of the West End and introducing our unique concept to the capital,” says Persaud.
“London offers myriad cuisines, but upscale Swiss food is totally underrepresented.”
The 80-cover restaurant will mix industrial features with soft furnishings, and feature a centralised bar and a semi-private dining area for ‘banquet-style feasting’.
