Ruth Hansom joins Pomona's London as head chef
The first ever female winner of Young National Chef of the Year (YNCOTY) will join the team on 1 May, when she will launch all-day and ‘relaxed fine dining’ menus focusing on British produce.
Dishes are set to include Swaledale lamb rump with spring onion, wild garlic, English pea and morrel; and Smith's Smokery eel with Isle of Wight tomato, aubergine and tarragon.
There’ll also be a tasting menu featuring the likes of Udale salt-cured duck breast with raisin, turnip and apricot; and Valrhona chocolate fondant.
Hansom joins Pomona’s from a head chef role at the Luton Hoo hotel in Bedfordshire and previously spent five years at The Ritz London, during which time she was named YNCOTY 2017 at the age of 21.
In 2018 she appeared on My Million Pound Menu alongside Ritz sommelier Emily Lambert and received a £750,000 - £1m investment from chef Atul Kochhar towards the opening of their British fine dining concept Epoch. Since the show the pair have run a series of pop-ups and private dinners, but it is not clear if plans to open Epoch are still going ahead.
