Pilgrim, founded by Jamie Duffield (managing director), Dave Bone (chef director) and Anthony Power (brand and marketing director), will hold 40 covers and serve a ‘radically seasonal’ Spanish menu. The brand’s name is inspired by the ancient pilgrimage, The Camino de Santiago, to Santiago de Compostela in Galicia, which has taken place since the 9th century.
The menu will mainly comprise of small plates, with dishes including wood-roasted pork chop and fennel emulsion; chargrilled sardines with black olive crumb; scallops with smoked butter; and barbecued octopus tentacle with guindilla pepper salsa.
Prices range from £9 to £12, with a four-course tasting menu also available for £35.
“We’ll be showcasing the diverse flavours and ingredients found along the many routes of the Camino, serving a flexitarian menu that showcases the highest quality local produce, all cooked over a live-fire hearth in our open kitchen,” says Power.
“With over 12 established routes of the Camino, we will have the scope to rotate the menu and bring a fresh approach and interpretations to traditional Iberian dishes."
This year’s series of My Million Pound Menu also saw victories for Filipino street food concept BBQ Dreamz, which launched a six-week residency at MEATLiquor in London’s King’s Cross following the series, and Indian-inspired burger brand Baba G, which has added to its locations in Brixton and Camden Market by securing a site at London Bridge’s new Vinegar Yard development.
