The ten-storey hotel is due to open in Kings Cross this summer, with Rawson taking up residence on the ground floor overseeing Isla restaurant and the Double Standard bar.
An all-day venue Isla will be the cornerstone of Adam’s culinary offering at The Standard, with a menu focusing on British coastal cuisine, light proteins and seasonal produce.
Integrated within the hotel lobby, diners at Isla will also be able to access an outside space with a terrace and a retractable awning.
Double Standard is inspired by the New York dive bar scene, with the menu featuring pub classics served alongside craft beers, wine and classic cocktails.
“I’ve really enjoyed the challenge of creating menus which reflect the distinct personalities of Double Standard and Isla,” says Rawson, who originally trained under Portuguese chef Nuno Mendes
“Double Standard is going to be a more raucous, convivial space, so I’ve come up with a selection of elevated snacks perfect for sharing, while Isla’s menu will be more delicate and much lighter - perfect for enjoying in the summer sunshine.”
The Standard is also set to house the first London restaurant for Peter Sanchez-Iglesias when it completes the second stage of its opening later in the summer. Sanchez-Iglesias, who is currently based in Bristol, is the chef behind the city’s Michelin-starred Casamia restaurant.
