Silo, which is run by zero-waste chef Douglas McMaster, will close its Brighton site this year and has partnered with Crate Brewery to open in its Hackney Wick taproom.
Crate began crowdfunding on 28 February and will use the investment to refurbish its site, creating an "experimental" brewery, workspace, and an extended bar.
Silo will open on the first floor and serve a “creative and sustainably-focused menu” for breakfast, lunch and dinner.
McMaster will also host workshops next door to the restaurant.
Silo opened in Brighton in 2014 and received national attention for its waste-free ethos, with plates made from plastic bags, tables from industrial floor tiles and work benches from filing cabinet frames. Leftover food is used to create compost, and the restaurant makes its own butter and mills its own flour.
Writing on the Silo Facebook page in February, the team said: “This year is our fifth and final year in our beautiful Brighton dwelling. As our lease ends we have decided to broaden our reach into the capital.
“We have the opportunity to evolve and take Zero Waste to the next level; to demonstrate the system works even in one of the world's biggest cities.”
Crate Brewery’s crowdfund will remain open for a further 13 days with an extended target of £750,000, which it hopes to use to invest in a canning line.
