Called Colchester Kitchen, it will be launched in the 16-room hotel by chef and restaurateur Preet Tandi, who also opened Indian street food restaurant Soho Wala at the tail-end of last year.
The 80–cover restaurant will serve Japanese food with Mexican influence, with dishes on the launch menu set to include edamame beans with yuzu butter and chipotle emulsion; grilled poussin with tequila truffle teriyaki; 50°C cooked salmon with habanero miso; and smokey berries with beer coulis, yogurt ice cream and blueberry foam.
It will also serve a selection of Mexican and Japanese spice influenced cocktails.
The restaurant’s interior has been designed to ‘capture the voracious spirits of Mexican and Japanese market places, bursting with colour and delicious vibrancy’, according to the marketing blurb.
Tandi is no stranger to fusion food and has previously worked at London restaurants including Nobu and at Edwardian Hotels London at its restaurants Mayfair Kitchen, Leicester Square Kitchen and Monmouth Kitchen in Covent Garden, the latter of which serves an Italian and Peruvian inspired menu.
The 50-cover Solo Wallah opened in November 2018 opposite Carnarby Street.
