Brighton’s Silo looks like it is finally coming to London after an earlier false start when plans to open in east London failed to materialise.

Silo, owned by zero-waste chef Douglas McMaster, has partnered with Crate Brewery to open in the brewery’s Hackney Wick home.

Crate will launch a £500,000 crowdfunding campaign on Crowdcube on 28 February to fund a major refurbishment of its White Building site.

Silo will be housed on the first floor specialising in a “creative and sustainability-focused menu" serving breakfast, lunch and dinner.

McMaster will host workshops in the new workspace next door to the restaurant.

It will be used for activities and talks on a variety of topics in keeping with Crate’s passions, including food, beer, art and culture.

Jess Seaton, Crate co-founder, says: “We are so excited for this brand-new chapter in the Crate story. The refurbishment of The White Building is going to allow us to really enhance our business and our creativity, with sustainability at the forefront.

“Douglas and Silo joining us is such an integral part of this for us, we can’t wait to see what the year brings.”

McMaster opened Silo in 2014 in the North Laine area of Brighton. Plans to move from Brighton to Hackney failed three years later when an ethical development it would have been part of went under.

It was not clear whether McMaster would shut the Brighton operation, although at the time the original Hackney venture fell through, he told BigHospitality he did not think it would be possible to run two Silos simultaneously and he would not want to.

He also said at the time that Brighton did not have the contemporary food culture needed to take Silo to the next level.

BigHospitality has contacted McMaster for further comment.
