Shaun Rankin and Grantley Hall partner on fine dining restaurant

Chef Shaun Rankin is to open a fine dining restaurant at the upcoming Grantley Hall country house hotel in North Yorkshire.

Rankin is partnering with the long-awaited luxury hotel and spa on the project, set to open near Ripon this spring.

Shaun Rankin at Grantley Hall will feature 38-covers and a chef’s table for up to six guests. It will source produce from a kitchen garden, currently in development, that will include bee hives and fruit trees.

Full menu details are yet to be confirmed, but signature dishes will include Yorkshire rhubarb crumble souffles with rosehip and iced clotted cream.

It follows a four-year, multi-million pound project by Grantley Hall owner Valeria Sykes to transform the 17th century property in to a luxury hotel and spa.

The 47-room hotel will also offer an ‘experimental pan-Asian’ restaurant, a relaxed all-day dining room, afternoon tea, and a spa lounge serving light meals and snacks.

The move marks a homecoming for Yorkshire-born Rankin, who has spent the majority of his career in Jersey, where he won his first Michelin star at Bohemia in 2005.

He opened Ormer Jersey on the island in 2013 and it won a star four months after opening, but the owners cut ties with the chef in 2017 after they disagreed about the planned direction of the restaurant.

Rankin opened Ormer Mayfair at Flemings hotel in London in 2016. He will remain involved with the restaurant while overseeing Grantley Hall.
