The Corn Stores will be the third site in the group’s portfolio, alongside The Shurlock Inn in the same town, and The Plough Inn in Reading.
The new 100-cover restaurant will comprise a bar on the ground floor, a steak restaurant on the second, and a members’ lounge on the third.
Overseen by the group’s chef director John Sparks, the restaurant will serve British meat that has been aged in dry ager display fridges. Dishes – most of which will be cooked on a robata grill – will include a wagyu burger; and a surf and turf board of lobster, t-bone steak, pork tomahawk, chips and salad.
A significant amount of the drinks menu will be given over to British drinks suppliers including Copper Rivet gin from Kent, and Nyetimber English sparkling wines.
The group will introduce a membership scheme, named Rare, where by card holding members will be given access to the 60-cover top floor lounge. Members will also be allowed to enjoy perks such as bringing their own wine to the restaurant.
The Victorian building’s design will retain many of its original features such as its brickwork, exposed beams, and the building’s original lift mechanism.
Rarebreed Dining was founded by Jonathan Matthew, who used to work for Caird Capital, the private equity company behind D&D London, and Jordan Hallows, former owner of Clapham's Circle Bar. The group launched its first site, The Plough Inn, in 2015. It acquired The Corn Stores in October 2017.
