Robin Gill to take the plunge with Darby's restaurant in London's Nine Elms

Robin Gill to open Darby's restaurant in London's Nine Elms next year
Chef and restaurateur Robin Gill will open a restaurant in London’s Embassy Gardens towers in Nine Elms next year, underneath a swimming pool.

Called Darby’s, it is set to open early next year in the retail and residential development, which includes 2,000 apartments. It will be sited on the floor below the SkyPool, a 25-metre long outdoor pool suspended 35 metres up between two residential towers, with food delivered by lift, according to a report in the Evening Standard.

The restaurant will reportedly serve an Irish-influenced menu with open fire cooking and have an on-site bakery. It will be the biggest project to date for Gill and his wife Sarah, who are also behind Clapham restaurants The Dairy, Counter Culture and Sorella, which was awarded a Bib Gourmand by Michelin​ in the recent publication of its 2019 guide to Great Britain and Ireland.

“Obviously the SkyPool is pretty phenomenal, it’s going to be a massive, massive feature. We will be looking after the bar and the food up there for the residents and people from the local area,” he told the Standard.

“There’s a lift at the back of the kitchen that leads up to the 10th floor where we will have this amazing food offering based on the offering from downstairs, and that’s going to be incredible when it’s built.”

Last year the chef closed his Paradise Garage restaurant in London’s Bethnal Green​ saying he wanted to open his first city centre venture. He once described the restaurant as a “successful failure”.
