Indian-born Joshi will oversee the menus at the restaurant, which has held a Michelin star since 2014, alongside chefs Sid Ahuja and Vipin Gairola.
He will also be working with owners JKS Restaurants on “new projects and expansion” going forward.
Originally from India, Joshi moved to London in 2001 where he cooked under Eric Chavot at the Capital Hotel and was head pastry chef at Gordon Ramsay’s Maze.
He relocated to Dubai in 2011, where he oversaw ten food and beverage sites at the luxury Taj Hotel.
Gymkhana opened in 2013 and topped Restaurant magazine’s list of the best 100 restaurants in the UK the following year.
JKS Restaurants' portfolio also includes Trishna, Hoppers, Brigadiers and delivery brand Motu Indian Kitchen.
The group also backs restaurants including Bubbledogs, Bao and Sabor.
