John Burton-Race takes up new role at The Millbrook Inn
The TV chef has joined the pub and restaurant until it finds a permanent head chef following the departure of Jean-Phillipe Bidart,
“We are having a true great of the culinary landscape take over the running of the Millbrook kitchen until we locate a to see us back on track for the next part in our journey,” writes co-owner Charlie Baker on the restaurant’s website.
Burton-Race, who is a regular customer of The Millbrook, “will be bringing his unique personality and passionate cooking style to our plates… and anyone who has been fortunate enough to enjoy John’s food will certainly share my pleasure in this announcement”, says Baker.
His new menu includes starters such as braised pigs cheek with sauce gribiche; and mussel and clam blanquette with garlic croutons; and mains of pork belly with apple, celeriac and a calvados jus; and roasted breast and confit leg of partridge, with potato fondant and fig.
In August Burton-Race resigned from the trouble-hit Richardson Hotel Group, which went into administration earlier this year, after less than two years at the company.
He tweeted at the time that he was seeking a “new venture”.
