The chef, who won the 2015 BBC series, will launch Woodkraft in the centre of Cheltenham later this year.
It comes a year after the opening of his first fine dining restaurant, Wood in Manchester, which received a rave review from Grace Dent in The Guardian.
Wood is also set to open another fine dining restaurant at the upcoming Hotel Indigo in Chester in 2019.
The site, which is currently under construction, will offer the same “unfussy, high-end dining” as the Manchester restaurant, including a blind tasting menu.
Wood says Woodkraft will be a more “accessible” dining concept making use of local artisan products such as cheese, breads, oils and meats.
“It’s a completely different concept to Wood but retaining the same ethos of classic flavours served with playful authenticity,” he says.
“Wood is all about un-intimidating fine dining in a relaxed atmosphere and Woodkraft will take this ethos and turn it into the perfect day time casual dining offering, maintaining high quality food and service.”
The Cheltenham restaurant will open daily 9am – 6pm with menus including breakfast and brunch options, as well as Sunday roasts.
