A Japanese-Mexican fusion restaurant will launch at a refurbished Manchester hotel next month, following a multi-million-pound investment.

Peter Street Kitchen will launch in the five-star, Edwardian Hotels-owned Radisson Blu in October, after its refurbishment is complete.

Dishes, predominantly small plates for sharing, will include the likes of shredded crab with spicy ginger mayonnaise tostadas; pisco-glazed smoked paprika ribs; and Mayan-spiced chicken salad with cashews, black lime and sesame oil. From the more Japanese side of the menu, dishes comprise Yellowtail sashimi with yuzu soy; chilli lemon roasted baby chicken on a bincho grill; Wagyu flatbread with fried chilli and yuzu mayo; and king crab tempura with ponzu.

Asian-inspired desserts include a chocolate bento box with matcha white ice cream; and Fuji apple crumble mousse with yuzu salt.

The launch of the restaurant coincides with the launch of the hotel’s new bar and lounge, Rikyu. The cocktail list has been curated by mixologist Dan Berger, who has overseen the cocktail menus at the likes of The Bed, The Blind Pig and Social Eating House.

The restaurant’s launch is being overseen by Edwardian Hotels London’s Service Excellence director, Amir Jati. Jati takes his experience from working at Nobu, as well as curating the launches of The May Fair and Monmouth Kitchens.

“This concept has proved enormously popular in London, with Leicester Square Kitchen in the top five of both Peruvian and Mexican restaurants,” says Jati.

"We know that Peter Street Kitchen will be a similar game-changer within Manchester’s booming restaurant scene.”

Continuing to put its stamp on the UK, Edwardian Hotels this week announced details of a landmark London hotel, The Londoner, that it will open in Leicester Square. The 350-room hotel is not expected to open until 2019, but when it does it will have five restaurants, and will feature London's deepest hotel basement.
