Anthony Demetre, former owner of now-closed, Michelin-starred restaurant Arbutus, will open a new café and bar in Kings Cross this autumn.

Comprising 45 covers, Vermuteria will join the impressive line of up food and beverage operators at the Coal Drops Yard development in October.

It will join the likes of Barrafina; Casa Pastor; The Drop; Morty & Bob’s; and Alain Ducasse’s Le Chocolat at the Heatherwick Studio-designed development.

Inspired by the bodegas and vermuterias of northern Spain and Italy, the restaurant will serve an all-day menu of salads, charcuterie and pastries, alongside a vermouth-based cocktail list.

Interiors will retain the original brickwork and arches of the historical site, and will feature drinks-related posters and memorabilia.

“I love a traditional, proper Negroni - and vermouth is my tipple of choice,” says Demetre.

“I have been experimenting with infusing vermouths with botanicals to enhance the flavour options, and Vermuteria will feature at least 40 different vermouths.”

According to the developer, King’s Cross is the largest mixed-use development in single ownership in central London for more than 150 years

Restaurants that are already trading near the prospective site include Dishoom; Caravan; Granary Square Brasserie; Granger & Co; and Vinoteca.

Demetre also owns modern European Mayfair restaurant Wild Honey, but is better known for his now-closed pioneering Soho restaurant Arbutus, which he launched with business partner Will Smith in 2006.

Arbutus is credited with pioneering the Parisian bistronomy movement in London, and for promoting affordable fine dining in the capital.
