Paul Ainsworth, chef patron Michelin-starred Cornwall restaurant Paul Ainsworth at No. 6, is launching a hospitality apprenticeship training scheme in partnership with a local college.

Ainsworth will offer four aspiring hospitality professionals from Truro and Penwith College apprenticeship programmes at his two Padstow restaurants, Paul Ainsworth at No.6 and Rojanos in the Square.

In November, the apprentices will take up full-time positions as the first entrants to the Paul Ainsworth Truro and Penwith Collge Academy.

Apprenticeship vacancies, which are currently live on the college’s website, include commis chef and front of house roles. Applications will close on 20 August.

“It is so important to me to help the community here in Cornwall and the fact that I can give opportunities to the younger generation is a real honour,” says Ainsworth in a statement on the college’s website.

“I also see this as a great opportunity for Cornwall, to ensure it stays on the map as one of the best places for food in the UK for many years to come, by shaping some of the best grass-roots talent.

Ainsworth will aim to teach the successful applicants the importance of work ethic, confidence, creativity and skill.

“I am confident that the opportunities and teaching that we will give to the apprentices will set a solid foundation for their future careers,” says the chef.

Ainsworth’s eponymous restaurant is the only Michelin-starred restaurant in Padstow, and also holds four AA Rosettes.

The chef cut his teeth working under the likes of Gary Rhodes, Gordon Ramsay and Marcus Wareing.
