Massimo Bottura to host London residency

Chef Massimo Bottura is landing in the UK to host a five-day residency in London next month.

Bottura, whose three-Michelin-starred restaurant Osteria Francescana in Italy topped the World’s 50 Best Restaurant list​ for the second time this year, will help launch the upcoming Conduit member’s club in Mayfair from 11-15 September.

The Conduit is hoping to become a “home for social change”, with food waste re-purposed as biofuel and compost.

It’s fourth floor restaurant will be overseen by Merlin Labron-Johnson, the chef behind London’s Michelin-starred Portland restaurant.

Bottura will take over the club’s restaurant for the first of a quarterly programme of chef residencies, where he'll be reproducing the original Osteria Francescana menu, including its iconic dishes such as ‘Oops! I dropped the lemon tart’ and ‘The Crunchy Part of the Lasagna’.

The week will culminate in a fundraising dinner with all proceeds donated to the chef’s Food for Soul project, which runs community kitchens for homeless and vulnerable people in London and worldwide.

“It is a privilege to welcome Massimo to The Conduit as our inaugural guest chef, and we look forward to entertaining our members and guests with his iconic menus, brought straight from the heart of Modena, amidst our convivial fourth floor restaurant,” says Mark Somen, CEO of The Conduit.

A spokesperson for The Conduit said the residency will be for members only, but they will be able to bring guests.

The Conduit's all-day food offering, including a cafe and rooftop bar, will be overseen by Gary Robinson, a former director at Conde Nast's restaurant division.
