British cheese-focused restaurant The Cheese Bar will launch a crowdfund campaign next week, aiming to raise £200,000 towards the opening of its new site in the West End.

The restaurant launched its permanent Camden site off the back of a £40k overfunded crowdfund campaign, and hopes to repeat the feat a second time round, having chosen the same equity-based platform to host the fundraising campaign.

Launching on 20 August, the campaign will offer Crowdcube investors a percentage of ownership of the company, as well as a range of rewards including free meals or private events catered by The Cheese Bar’s street food operation, varying with size of investment.

Founded by Matthew Carver, The Cheese Bar started life as The Cheese Truck, serving a variety of grilled cheese sandwiches from Bedford vans at festivals and street food markets.

The new two-storey restaurant will serve a menu of cheese-based plates and grilled cheese sandwiches, with a basement bar offering natural wines to pair with cheese and charcuterie plates.

Dishes will include the likes of smoked mozzarella sticks with chilli jam; Mayfield gougeres; chicken poutine with crispy sage; and blue cheese raclette with salt beef and crispy leeks.

Carver’s signature grilled cheese sandwiches will also be on the menu, including a stilton, bacon and pear chutney sandwich; and a sweeter option including goats cheese, honey and walnut.

Cheese will all be sourced from British suppliers, and will be displayed in fridges where wheels and truckles of various varieties of cheese will be maturing.

The Cheese Bar previously operated a site in Deptford Market, serving a similar list of grilled cheese sandwiches and raclette, but it closed earlier this year
