Harbour Hotels continues its South West coastal expansion
The company acquired the Fowey Hotel and Padstow’s Metropole Hotel from the Richardson Hotels Group this month, both of which will be rebranded under the Harbour name in 2019.
The Fowey Hotel, above the Fowey Estuary, comprises a two-rosette restaurant and bar, and is often used as a wedding venue.
The hotel’s kitchen, headed up by Mark Griffiths, serves a locally-sourced menu including the likes of Devon and Cornwall pan-seared steak with confit potato; Cornish stone bass with Parisian potatoes and ratatouille; and a board of cheese from local cheesemakers.
The Metropole Hotel overlooks the Camel Valley Estuary, and also has an onsite two-rosette restaurant and bar as well as a spa and outdoor pool.
The Metropole’s head chef, Mark Aldred, also uses local Cornish ingredients in dishes such as Cornish crab with avocado espuma, tomato caviar, red pepper essence and brown crab crisp; monkfish with curried parsnip, squash and shallots; and butter-poached guinea fowl breast with dauphine potatoes, cabbage heart and cauliflower cheese puree.
Both hotels will be refurbished, and the hotel group’s new HarSPA brand will be introduced to the properties.
