The opening, on the site of a former Prezzo at the Centertainment leisure park, will be the second in the city for the group, creating 45 new jobs.
Proove currently operates a full-service Manchester restaurant; two Deliveroo Editions kitchens in Manchester and Leeds; and a pizza van used for pop-ups.
The first independent restaurant to open in the centre, Proove will join the likes of PizzaExpress; Nando’s; Harvester; and Frankie & Benny’s.
The restaurant, founded in 2015 by Deepak Jaiswal and Rob Engledow, prides itself on its authentic approach to creating Neapolitan pizza.
Its pizza ovens are made in Naples and sent to the UK, and its dough is made with Italian Caputo flour before being proved for 20 hours. Wines and produce are sourced from Naples and the surrounding Campania region.
The menu comprises a short list of Italian salads such as caprese; a selection of antipasti including bruschetta; parmigiana di melanzane, and ‘tronchetto’ pizza dough parcels; and a list of pizza and calzone.
Pizza varieties include classics such as margherita; marinara; funghi; and diavola; as well as a meat and a vegetarian calzone.
Designed by local interior designer Sally Flude, the 46-cover site will be spacious and light, with a bar seating area; an al fresco bar; and a central ‘pizza bar’ acting as the centerpiece of the room.
