The restaurant will see the brand extend its typically quick-service offer to a more fast-casual style, with counter ordering and food brought to the table. It will also offer an extended menu that will feature more side dishes to encourage longer linger time.
Rola Wala, which has sites in Leeds Trinity Kitchen, Oxford Westgate and Spitalfields, will draw on its time at London street food night market Street Feast for the new menu items, which will include as lollipop chicken and bahji fries. The company says it will also consider the food hall opportunities within the department store.
The 1,200sq ft site, next to Pret and Yo! Sushi, has seating for 70 and is bigger than previous sites, allowing more space for menu development in the kitchen.
“For us, we’re very much about bringing the streets inside, and in terms of what we can deliver on experience, it’s perfect for Selfridges,” says co-founder Mark Wright.
“We’ve got something a bit different to what’s out there. We’re not just plonking seats down there and putting food out, we’re creating a whole atmosphere, a whole Rola Wala brand feel. I definitely see it as something we could develop with Selfridges.”
“Birmingham has a massive local Indian population, so we feel it’s just the right fit for us and the right time to try something different, though our core model will be exactly the same.”
