Richard and Nikki Cooper will launch the Marine Parade site, which will have 130-covers inside and 60 outside, at the end of March, reports BigHospitality’s sister publication MCA.
The all-day restaurant will serve artisan coffee and in-house baked goods during the day, and a casual dining menu at night, alongside beer and cocktails.
The evening menu will include fried fish and burgers, as well as drinking food such as Japanese ribs and Asian wings.
“We are drawing from influences from all around the world,” says Richard Cooper.
“The great thing about where we are today with food is that anything goes. We don’t have to be limited.”
The concept, which is described as having a casual, beachside feel, is expected be the first of five West Country waterside sites, with the possibility of two more still under negotiation. The partners are looking to open in coastal areas of Devon, Dorset and Cornwall.
The Coopers launched The Stable in Bridport, Dorset, in 2009. In 2014, London brewer and pub company Fuller, Smith & Turner acquired a 51% share in the business, which now operates 17 sites.
According to MCA, the new direction for the Coopers comes as they prepare to exit from The Stable brand at the end of the financial year.
