Tom Brown's debut restaurant will be named Cornerstone

Former Outlaw’s at The Capital head chef Tom Brown has revealed that his debut London restaurant will be named Cornerstone.

Brown is striking out on his own after stepping down from the Michelin-starred seafood restaurant in September after two years.

The chef has secured a site in Hackney Wick for his first solo venture, which will open early 2018.

Given Brown’s background, it’s unsurprising the restaurant looks to be taking a seafood focus.

A sample menu on Cornerstone’s website lists dishes such as octopus cooked in cider, with apple and lentil dressing; smoked haddock, leek, rarebit tart and pickled walnuts; and pickled oysters with celery and horseradish.

On the land-based side is duck leg scrumpet, chicory ketchup, orange and smoked almonds; and chicken liver croquettes and devilled mayonnaise.

Brown wrote on Instagram that he was ‘hoping to create something really special’.

The chef previously described his departure from The Capital as an ‘end of an era’, but said it had always been his dream to open his own restaurant.

Nathan Outlaw wished Brown well in his new venture, and will continue to support the chef with his new project.
