The property appeared in the Channel 4 show Gogglebox when its previous owners Steph and Dom Parker were filmed in the hotel’s lounge, but its new owners confirmed in a statement that the pair have since left the business.
John and Dorothy Fothergill took over the hotel in December 2016 and have since undertaken a major revamp of the site.
Head chef Hughes, who has cooked at Michelin-starred restaurants including Whatley Manor and Ynyshir Hall, is overseeing a 26-cover restaurant, 16-cover Tasting Room and 20-cover private dining room.
His new a la carte menu (£11-£30) includes scallops with heritage beetroot, parmesan bon bons, smoked haddock and potato espuma; and lightly smoked duck breast, butter poached lobster, asparagus tortellini, carrot and ginger puree and veal orange glaze.
There is also a selection of lunchtime small plates (£2-£16) and a three-course Sunday lunch £29.50, alongside a 100-bin wine list featuring bottles from local Kent estates.
The Grade I-listed Salutation was built in 1912 as a private residence and has since transformed in to a 17-room hotel.
